Summary
Mild Edam is considered compatible with fruit such as peaches, melons, apricots, and cherries. Aged Edammer is often eaten with traditional "cheese fruits" like pears and apples. Like most cheeses, it is commonly eaten on crackers and bread. Pinot noir is a recommended wine to accompany this cheese. It is also typical in Spain and Latin American countries where it is considered a delicacy. It is the most common cheese used in the popular Czech snack smažený sýr.

General Information
Edam Cheese is second to Gouda as Holland's most exported cheese. It is made from pasteurized partially skimmed milk and comes in spheres with a flattened top and bottom. It comes in loaves as well.
Taste
Edam cheese has a pale yellow paste with a smooth, elastic texture and a mellow, delicate flavour.
Appearance
Most mass-produced Edam cheeses come in a coating of red wax and usually ripened for about 6 to 8 weeks. Cheeses that have been ripened for a minimum of 17 weeks and occasionally up to 10 months usually come with a black wax coating.
