General Information

The jerusalem artichoke, or sunchoke is a root vegetable with a taste that resembles an artichoke. It is one of the few American native vegetables that was exported to the Old World.

Selection and Storage

Available year round, jerusalem artichokes are at their sweetest trhough fall and winter. Look for smooth, clean tubers, of equal size (easier for cooking). Green tinged tubers, or those with sprouts should be avoided.

Fresh chokes can be stored for about a week in the fridge, wrapped in plastic. Check for moisture, softness, and blotchiness. Also avoid freezing or canning, as they darken and get mushy. They can be jarred, by pickling.

Uses

They are great raw in salads, or on their own. Add them to your favorite dishes.

They can also be steamed, boiled, sauteed, and roasted.

Preparation

They need to be scrubbed very well before using. They can be peeled, although it is an arduous task.

Jerusalem artichokes typically provide 60 calories per 1/2 cup.
