3 Tablespoons Butter3 Tablespoons Onion Minced

2 Cups Rice, Uncooked
3 Cups Chicken Broth
1 Tablespoon Parsley, fresh chopped
1/4 Teaspoon Thyme, Dried
1/8 Teaspoon Cayenne Pepper
1/8 Teaspoon Black Pepper

Directions
- Preheat oven to 400 degrees.
- Melt butter in an ovenproof casserole, add onion and some salt and cook until the onion is transparent.
- Add rice stir well until it is completely coated. Add the chicken broth, parsley, thyme, cayenne and black pepper, stir well, cover and bake at 400 for 20 minutes.
- Remove from the oven and allow the rice to rest for 10 minutes.
