Ingredients

3 Tablespoons Butter
3 Tablespoons Onion Minced
1/4 Teaspoon Salt
2 Cups Rice, Uncooked
3 Cups Chicken Broth
1 Tablespoon Parsley, fresh chopped
1/4 Teaspoon Thyme, Dried
1/8 Teaspoon Cayenne Pepper
1/8 Teaspoon Black Pepper

Directions

  1. Preheat oven to 400 degrees.
  2. Melt butter in an ovenproof casserole, add onion and some salt and cook until the onion is transparent.
  3. Add rice stir well until it is completely coated. Add the chicken broth, parsley, thyme, cayenne and black pepper, stir well, cover and bake at 400 for 20 minutes.
  4. Remove from the oven and allow the rice to rest for 10 minutes.
