Ingredients

1/2 Cup Salted Butter, Hard
1/4 Cup White Sugar
1 Cup All Purpose Flour
3/4 Cup Brown Sugar
2 Teaspoons Corn Syrup
1 Egg
1 Tablespoon Salted Butter, Softened

Directions

  1. To make the pastry shell, first process butter and sugar until creamy. Add flour and process until it forms a ball. Place in plastic wrap and refrigerate for at least 1 hour.
  2. Spray small size tart pan with Pam. Cut small pieces of the dough and place into each tart space. Using fingers put dough in to desired thickness, being careful to keep below the top of each tart. Bake at 350˚ for 5 minutes.
  3. While the pastry is baking prepare the filling. To make the filling, combine the brown sugar, corn syrup, egg and softened salted butter. Process in cuisinart, or with hand blender until well mixed.
  4. Remove from oven and push the baked pastry down to get rid of the bubbles.
  5. Place a raisin or two in the bottom of each tart (or a pecan if desired). Add the filling and bake at 350˚ until done, about 5 minutes. Remove from oven and gently use a knife around each tart. Remove when cool and enjoy!

I make these every year for the holidays with my girls. They love placing the raisins in the tarts!

Notes

These freeze well in a plastic container for a couple of weeks.
