Cabbage Rolls Romanian Style

I got this recipe from my dear friend Ricki. It is a real treasure and very delicious.
Ingredients
1 Cabbage1/2 Onion chopped
1 Clove Garlic Minced
4 Tablespoons Olive Oil
1 Can Sauerkraut, strained
1/2 Cup Fresh Dill Chopped Fine
1/2 Pound Minced Veal
1/2 Pound Minced Beef
1/4 Teaspoon Sea Salt
1/8 Teaspoon Black Pepper, Freshly Ground
1 Cup Rice - Uncooked
1/2 Cup Water
1 Teaspoon Hungarian Paprika
1 Piece Smoked Turkey on the Bone
1 Cup Water

- In a small saute pan over medium heat place 1 tablespoon of olive oil, add the chopped onion, pinch of sea salt and a bit of black pepper. Cook until translucent, add the chopped garlic and cook for one minute, add 1/4 teaspoon of the Hungarian Paprika and set aside to cool. When the mixture is cool, place it in a bowl, add the minced veal, beef, rice, 1/2 cup of water, salt, pepper and a pinch of dill. Mix these ingredients very well and set aside.
- Place whole cabbage into boiling water-- enough to cover the whole cabbage-- for 3 minutes. Remove water and let cool-- this makes the removal of whole leaves to make individual rolls, easier; also makes folding each leaf easier. In a non-reactive pot, I use an enamel "Le Creuset", place 2 tablespoons of olive oil, then a layer of Sauerkraut and sprinkle a teaspoon of chopped dill. Mise en place: Drained Sauerkraut, chopped dill, cabbage leaves, meat mixgture, 3/4 teaspoon paprika in 1 cup of water and the smoked turkey. Begin making the cabbage rolls. I usually make 14 rolls in total from this mixture. Fit the rolls tightly over the layer of sauerkraut, add more sauerkraut and 1 teaspoon of chopped dill. Add the piece of smoked turkey, then fit the other cabbage rolls next to the turkey, add more sauerkraut and dill. Pour the cup of water and paprika mixture over the whole thing, cover, and simmer for 2 hours.
- Serve with fresh sour cream, and Enjoy! Freezes very well.
