Ingredients

4 Egg Whites
Pinch Salt
1 tsp Vanilla
1/8 tsp Cream of Tartar
2/3 cup Sugar
2/3 cup Icing Sugar
2/3 cup Cocoa
1 cup Dark Chocolate Chips
1 tbsp Cornstarch

Directions

  1. Whip the whites and salt. Add the vanilla, and continue beating to form stiff peaks. Stir the cream of tartar into the regular sugar and whisk into the whites very gradually, a spoonful at a time, until the meringue is stiff and the sugar has dissolved.
  2. Sift together the icing sugar, cocoa and cornstarch. Gently fold into the meringue and add the dark chocolate chips until fully incorporated.
  3. Spoon the meringues onto a parchment-lined baking sheet. Bake at 225ºF/110ºC for 1.5 hours. Remove from the oven and let cool on the trays.
  4. Can be stored in an air-tight container for later.
