Summary

These are a delicious cookie, simple and quick, and are touch healthier and more interesting than your plain chocolate chip cookie.

This recipe has it's origins in the Joy of Cooking, but everytime I make them I tweak them a bit, and these ones were the best so far!

Ingredients

1 cup butter (at room temp)
1 cup white sugar
1 cup brown sugar
2 large eggs
2 tsp vanilla extract
2 tbsp milk (I use skim, I don't imagine changing this would matter)
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 1/2 cups rolled oats (not instant)
2 cups chocolate chunks or chips

Directions

  1. Preheat oven to 350.
  2. Cream together butter and sugars, using electric mixers or a kitchenaid.
  3. Add the eggs, one at a time to the mixture, and beat in.
  4. Beat in the milk and vanilla extract.
  5. Turn your mixer down to low speed, and slowly mix in the dry ingredients - the flower, baking powder and soda, and the salt, until just incorporated.
  6. After the dough has come together, stir in the oats and the chocolate chunks.
  7. At this point, you can simply drop 1 inch balls of cookie dough onto an ungreased cookie sheet and bake them right away till they're golden, around 11-13 minutes depending on your oven.
  8. Or you can do what I do... form the dough into a log, and wrap it tightly in saran wrap, then stick it in the freezer.
  9. With this method, you can just slice off 1 cm rounds of cookie dough to bake as you want to, making as big or small a batch that you need.

    I used http://caloriecount.about.com/cc/recipe_analysis.php to do a nutritional analysis for the recipe, this is per cookie if you get 4 dozen out of them, which gives you a medium sized, thin cookie.
