Directions

  1. Precook the pumpkin. You can either cook it in the oven, or boil it. Once the pumpkin flesh is soft, smush it up. Optionally you can get canned pumpkin flesh, already ready.
  2. Preheat oven to 175°C, and prepare a 25 cm tart pan. Brush 1 beaten egg on the unbaked crust, and bake it for 5 minutes. Remove from oven, and increase the temperature to 220°C.
  3. Combine all the ingredients together, except for the ice-cream. Pour the mixture into the pie crust.
  4. Bake for 10 minutes, then reduce the temperature to 160°C, and bake for another 30 to 40 minutes.
  5. When ready, let it cool, and serve with the vanilla ice-cream.

Notes

You can serve with whipped cream instead of vanilla ice cream. It's equally delicious! Photo from mikecco: http://www.sxc.hu/browse.phtml?f=view&id=616671
