- With the rack in the middle position, preheat the oven to 400’F.
- Remove from chicken from the fridge and pat dry with paper towels.
- Brush the outside with oil. Season with salt and pepper.
- Set chicken in roasting pan. Roast until the thermometer reads 175F, about 1 hour.
- Allow 15 minutes to rest uncovered in a warm spot in the kitchen.
