Summary
The coconut bake is a classic island dish, and should be served "Breakfast in Grenada" style with Salt Fish, and Cocoa Tea!
Ingredients
1 Whole Coconut, Opened with Meat Blended2 Cups Flour
1 Tablespoon Baking Powder
1 Tablespoon Salt
1 Tablespoon Sugar
1/4 Pound Softened Butter

Directions
- If not already done, blend the coconut meat in the blender using a bit of water.
- Preheat the oven to 350 degrees.
- Mix all of the dry ingredients together add the butter, mix well with hands, add the blended coconut mixtures, mix well, making a dough.
- Break the dough into 4 even pieces, make into 1½ inch high rounds, place on a greased baking sheet and bake for 45 minutes to an hour until golden brown.
- Serve with the salt fish topping on the same plate as the golden coconut bakes, with a cup of delicious Cocoa Tea for a complete "Breakfast in Grenada".
