Ingredients

1 Tablespoon Unsalted Butter
1/2 Cup Brown Sugar
1/4 Cup Flour
Cinnamon
1/4 Pound Unsalted Butter
1 Cup Sugar
2 Large Eggs
2 Teaspoons Vanilla
1/8 Teaspoon Salt
2 Cups All-Purpose Flour Sifted
2 Teaspoons Baking Powder
2 Teaspoons Baking Soda
1 Small Sour Cream

Directions

  1. Preheat the oven to 350 degrees. Butter an 8" round cake pan, with a hole in the center and set aside. Mix together the first five ingredients for the crumb topping and set aside in a small bowl.
  2. Cream the butter and sugar. Add eggs one at a time. Beat well. Add the vanilla, mix.
  3. Dissolve baking powder and baking soda in the sour cream.
  4. Add the sour cream mixture along with the flour 3 times, alternately mixing just a bit each time. Over mixing makes a tough cake.
  5. Put the mixture into the buttered pan, cover with the crumb topping.
  6. Bake at 350 degrees for about 35 minutes. If using a convection oven 325 degrees for the same amount of time. Either way, test with a toothpick, that comes out of the cake clean, the cake is done.
  7. Remove from oven. Let cool for about 15 minutes, then turn out on to a plate.
  8. Serve with whipping cream and sliced white peaches. Enjoy!
