Directions

  1. Prepare the fruit for inside the Crêpes. Peel and slice the apples in approximately 12 wedges. Heat a pan, add 1 tbsp of butter, cook until foaming, then add the apple slices. Sprinkle with brown sugar and cinnamon sugar mixture, Cook on medium heat until the apples are tender, remove from the pan and set aside. Wash some fresh blueberries, raspberries and strawberries. Put them on a plate and set aside.
  2. Place the eggs, milk, water, flour, salt and melted butter in a blender. Blend well and put the crêpe mixture in a pitcher for easy pouring.
  3. Heat a small Teflon pan. Add some butter. Pour a small amount of the crêpe batter. Move the pan around to coat the whole bottom with the batter. Watch carefully, when it bubbles, turn for a moment or two. Remove and set aside. the first crepe usually does not turn out well. The rest will be lovely.
  4. Lay the crêpe on a plate. Put some fruit on and roll the crepe, add some Maple Syrup and a little icing sugar and enjoy.

Loved this recipe. Made it savory with salt and pepper instead of sugar, stuffed each crepe with ricotta and spinach mixture, used a white sauce and some cheese on top and it was delicious.
