6 Cups Chicken Stock6 Medium Sweet Potatoes, Peeled and Diced
2 Medium Spanish Onions, Diced
3 Large Carrots, Peeled and Diced
2 Teaspoons Ginger, Peeled and Grated
4 Teaspoons Butter
Pinch Salt
Pinch White Pepper

Directions
- In stockpot saute onions in butter until translucent.
- Add carrots, sweet potato, ginger, and stock. Simmer for two hours.
- Puree soup in food processor and adjust seasoning with salt and pepper.
- Heat to serve. Place in bowls and garnish with a dollop of sour cream!
