This is a simple healthy, egg sandwich that anyone can make very quickly.

This sandwich is dedicated to my friend Adam...who loved eggs...and taught me to appreciate them too.
Ingredients
1 whole English Muffin - halved1 whole Egg
1 slice Cheese
2 slices Tomato
2 leaves Lettuce
pinch Salt
dash Pepper

Directions
- Toast one english muffin until golden brown, butter or margerine if desired.
- In a non-stick pan, fry the egg 'over easy' - and just a bit longer in order to firm the yolk and reduce mess when eating. Salt and pepper to taste.
- Add tomato slice and lettuce leaf on half of the english muffin.
- Next add the cheese slice and the cooked egg in between.
- Follow with additional tomato slice and lettuce leaf. Place second half of english muffin....and enjoy!
