Ingredients

2 Pounds Boneless Chicken Breasts & Thighs
2 Tablespoons Olive Oil
3 Tablespoons Flour
1 Tablespoon Baking Powder
1/2 Teaspoon Sea Salt
1/2 Teaspoon Freshly Ground Pepper
4 Cloves Garlic, Chopped Fine
1/2 Cup Fresh Parsley, Chopped Fine
2 Tablespoons Unsalted Butter
1 Lemon, Cut in Quarters

Directions

  1. Wipe the chicken dry, then cut into 2” pieces and set aside on paper towel.
  2. In a bowl combine flour, baking powder, salt & pepper and toss chicken pieces. Shake off the flour mixture.
  3. Heat up a large frying pan on medium high, add the olive oil and when just before smoking add the chicken pieces leaving lots of room between pieces. Cook about 5 minutes on each side until they are brown. Remove the pieces that are done and repeat the process until all of the chicken is brown, then add all of it to the pan.
  4. Add the garlic, parsley and butter to the pan and toss together for a couple of minutes on medium heat.
  5. Put on a serving platter with lemon wedges and Enjoy!
