Afredo sauce is a basic butter and cheese sauce. In north America most recipes involve cream. That is why I have made it to North American standards.Also I have added shallots and garlic, because it is so good.

Ingredients

6 Oz Chicken Breast, sliced into 1/2 inch slices
1 Shallot, minced
1 Clove Garlic, minced
1/3 Cup Parmigiano, fresh grated
1/2 Cup 35% Cream
2 Tbsp Butter
Fettuccine
Splash White Wine

Directions

  1. Heat butter in saute pan, medium heat. Season chicken with salt and add to pan cooking gently 3min each side. Remove chicken and reserve.
  2. Cook fettucine in salted water until al dente.
  3. Add garlic and shallot to empty sauce pan. Saute for 2 minutes. Add splash of wine. Add cream and chicken. Add half the cheese. Season with fresh ground pepper or chilies to taste (optional).
  4. Strain the pasta, and add to the sauce. Top with remaining cheese.
