Ingredients

1 tbsp Butter
1 sprig Rosemary (optional)
2 Granny Smith Apples
1/2 tsp Ground Cinnamon
1 tbsp Sugar
1 tbsp Cold Water

Directions

  1. Peel and dice the apples.
  2. In a small pot, on high heat, add 1 tbsp of butter. Add a sprig of rosemary, and melt butter.
  3. Add diced apples to melted butter and mix well. Cook for a few minutes.
  4. Add 1/2 tsp of cinnamon, and 1 tbsp of sugar. Add enough water to cover the base of the pan, but not the apples. Cover with lid and simmer for 5 minutes on med-low heat.
  5. Remove lid, stir and let simmer for an additional 5 minutes.
  6. Take off lid, and remove rosemary sprig. Puree with hand blender or food processor or leave chunky if desired. Adjust consistency by adding more water or returning to stove for several minutes.
  7. This sauce should not be sweet. It should be crisp and tart.
