Groundmeatless Spaghetti Sauce
Recipe
Summary
I love meat sauce, but I don't eat ground beef. This sauce is a great substitute. If you aren't a bacon fan, or prefer ground beef, you can still make it the traditional way.

Directions
- Put a large pot of water on to boil for the pasta.
- Place the diced bacon in a sauce pan on medium heat. Add the 1/4 cup of water, and cook for 5-10 minutes until water evaporates. This will pre-cook the bacon, and render the oil.
- Add onion, carrot, and celery. Cook until they begin to soften.
- Add garlic, parsley, oregano, basil, pepper flakes, salt, and pepper. If needed, also add some olive oil to the pan. Add tomatoes and mix well.
- Once water is boiling in the pot, salt the water, and add pasta. Cook as directed on the package.
- Turn the sauce down to low, and continue to simmer until pasta is ready.
- Drain the pasta. Place in a serving bowl and top with a generous amount of sauce. Garnish with the fresh basil, and freshly grated parmesan.
