Summary

I love meat sauce, but I don't eat ground beef. This sauce is a great substitute. If you aren't a bacon fan, or prefer ground beef, you can still make it the traditional way.

Ingredients

4 Slices Bacon, diced
1/4 Cup Water
1 Onion, diced
1 Carrot, shredded
1 Celery Stalk, diced
1 Clove Garlic, minced
1 tbsp Parsley, dried
1/2 tbsp Oregano, dried
1 tsp Basil, dried
1 pinch Hot Chili Pepper Flakes
1 pinch Chipotle Pepper Flakes
Olive Oil (as needed)
1/2 tsp Salt (to taste)
1/4 tsp Black Pepper (to taste)
1 Can Italian Plum Tomatoes
1 Package Spaghetti
Fresh Basil, chopped
Parmesan, freshly grated

Directions

  1. Put a large pot of water on to boil for the pasta.
  2. Place the diced bacon in a sauce pan on medium heat. Add the 1/4 cup of water, and cook for 5-10 minutes until water evaporates. This will pre-cook the bacon, and render the oil.
  3. Add onion, carrot, and celery. Cook until they begin to soften.
  4. Add garlic, parsley, oregano, basil, pepper flakes, salt, and pepper. If needed, also add some olive oil to the pan. Add tomatoes and mix well.
  5. Once water is boiling in the pot, salt the water, and add pasta. Cook as directed on the package.
  6. Turn the sauce down to low, and continue to simmer until pasta is ready.
  7. Drain the pasta. Place in a serving bowl and top with a generous amount of sauce. Garnish with the fresh basil, and freshly grated parmesan.
