I recently started a new job, where I met Mona (who is known for both her cooking and her generosity). One day while meeting with two other members of my team, Mona brought us a lilttle snack - which turned out to be the most delicious guacamole I'd ever tasted. She let me share this with you. Thank you Mona!!

Ingredients

2 medium ripe avocados, seeded and mashed
1 large tomato, diced
to taste seeded, diced jalapeno pepper
to taste ground sea salt and ground black pepper
1 tbsp Extra-Virgin Olive Oil
1 small clove crushed garlic
1 lime juice, freshly squeezed

Directions

  1. In a medium sized bowl, mash the two ripe avocados. Add the diced tomatoes, crushed garlic clove, diced jalapeno pepper, salt, pepper and olive oil and lime juice. Blend well. Use your favourite tortilla chip or firm seeded crackers or crispbread - and enjoy!!

Notes

I sometimes used the Derlea Garlic Jalapeno Puree - a heaping teaspoon. This is also delicious.
