- Place 4-6 wafer cookies in the food processor and pulsed until processed into a fine crumble. Place in a small bowl and set aside the crumbs. Wipe the processor bowl clean.
- Add the cream, sugar and vanilla to the processor. Tip the machine on an angle and whip the cream until desired consistency.
- Using a nice dish, begin assembling the pie in layers, beginning with the cookies and finishing with the cream. Layer the cream on top of the cookies for 3-4 layers and sprinkle the cookie crumb topping on the top layer to finish. Place in the fridge for 8 or more hours.
- Garnish with fresh raspberries or strawberries and enjoy!
