Ingredients

1/8 teaspoon Red Pepper Flakes
2 tablespoons Butter
2 tablespoons Oil
3 Leeks, diced
1/2 teaspoon Sea Salt
2 cloves Garlic, chopped fine
2 litres Chicken Broth
3 medium Potatoes, diced
35% Cream

Directions

  1. In a Soup pot add red pepper flakes, butter and oil - when the butter is foaming add the leeks and the salt, cook until just a bit beige and soft. Add garlic and cook until fragrant, then the chicken broth and the potatoes, simmer until the potatoes are done.
  2. Serve with the few drops of cream and sprinkle with chives and enjoy!
  3. Use the immersion blender until the soup is well blended, taste for salt and pepper.
