Linguine with Tiger Shrimp, Chourico, and Oyster Mushrooms

6 slices Smoked Portuguese Chourico2 tbsp Onion, diced
1 clove Garlic, sliced
6 Tiger Shrimp
handful Oyster Mushrooms, torn into strips
pinch Crushed Chiles, or to taste
3/4 cup Basic Tomato Sauce
splash White Wine
chopped Fresh Parsley, to garnish (optional)
2 tbsp Olive Oil
1 Package Linguine

Directions
- Heat olive oil in saute pan. Season shrimp with salt and cook 1.5 min each side and remove from pan.
- Add onion, saute until soft but not brown. Add garlic,sausage and mushrooms saute for 4 minutes more.
- Add splash of white wine and tomato sauce. Add reserved shrimp and let them finish cooking 3 minutes. Taste and adjust seasoning.
- Cook linguine in salted water until al dente, strain and add to sauce.
