Ingredients

6 Medium Yukon Gold Potatoes
Cold Water
1 Teaspoon Salt
2 Tablespoons Unsalted Butter
1/4 Cup Whipping Cream 35%
to taste Salt
to taste Pepper

Directions

  1. Peel the potatoes, cut them into small cubes, so they cook quickly.
  2. Place them in a pot and cover with cold water, 2 inches above them, bring them to a boil and then add the salt.
  3. When soft and ready, drain the potatoes.
  4. Put the potatoes through a potato ricer. Add the butter, cream, salt and pepper and mix well.
