I always feel creative when I add ingredients to taste and experiment. This will work well with anything you can saute or stirfry. You adjust the quantities and decide if you prefer the emphasis to be on the bitter or sweet or garlicky side.

Ingredients

1 Teaspoon oil
to taste garlic
2 cooking onions
1 Bunch mushrooms, all kinds
to taste balsamic vinegar
to taste brown sugar

Directions

  1. Cut up the mushrooms and onions to whatever size you like.
  2. If you're using fresh garlic, press the cloves,through a garlic press in the amount that you think will be right. I prefer to use the minced garlic that comes in little jars. It's just easier.
  3. Heat the oil. Use only enough to coat the fryinging pan.
  4. Throw in the garlic and onions and heat until the onions are soft and wilted.
  5. Add the mushrooms and fry for a while. You'll probably have to drain off some liquid.
  6. Add the balsamic vinegar and brown sugar and fry until it starts to thicken. The art is in checking the taste every minute or two to see if more garlic, balsamic vinegar or brown sugar tastes better. It can't be bad. The balsmaic vinegar has a sharp taste that the brown sugar cuts and it becomes thick and carmelized. Just keep trying. People love it.

Notes

You can also use the balsamic/garlic/brown sugar mixture as a glaze and pour it over chicken or stir fry chicken in it, pour over asparagus, it's very versatile, easy and fast (especially if you use the jars of garlic).
