Oriental Stir-fry with Chicken

Ingredients
1 1/2 tsp. sesame oil1 tsp. minced ginger
1/2 tsp. minced garlic
1/2 cup chicken stock
1 tbsp. soy sauce
1 tbsp. brown sugar
tabasco sauce
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 tsp. lemon or lime juice
2 tbsp. vegetable oil
6 oz. boneless, skinless chicken breast cut into small strips
1/2 cup sliced mushrooms
1/2 cup red or green pepper
1/4 cup toasted slivered almonds
Cooked brown rice or noodles

Directions
- Heat the sesame oil in a small saucepan.
- Add the ginger and garlic. Stir fry for 30 seconds over medium heat.
- Add the chicken stock, soy sauce, brown sugar, tabasco, salt, pepper and lemon or lime juice.
- Bring to a boil with constant stirring.
- Simmer for 1 minute.
- Remove the heat and set aside. The sauce can be made in larger quantities and stored in the refrigerator.
- In a frying pan, cook the chicken strips. You can also cook the chicken in the oven.
- Prepare the rice.
- Cook the mushrooms in a small frying pan.
- When the chicken has finished cooking, add it to the sauce.
- Place the chicken over a flat layer of rice.
- Add the mushrooms, pepper, and almonds over the chicken.
