Ingredients

1 Acorn Squash
1 tablespoon Olive Oil
1 teaspoon Oregano
1/2 teaspoon Sea Salt
1/4 teaspoon Freshly ground Black Pepper
1 tablespoon Unsalted Butter
1/4 pound Gorgonzola Cheese

Directions

  1. Preheat the oven to 400 Convection or 425 regular Wash squash, cut it in half, remove the seeds, the cut the halves in half. place the 4 pieces of squash on a foil lines baking pan, place the olive oil, oregano, sea salt and pepper into each piece of squash. Cut 1 tablespoon of butter, divide it into four squares and place each square into each piece of squash. Bake for 45 minutes. Remove from the oven . This can be done a few hours before.
  2. Just before serving divide the cheese into four, cut into small squares, place it into each of the pieces of squash and put them under the broiler for about 5 minutes, until the cheese is bubbling, and Enjoy!
