This dish started out to be a side dish, but we had a meeting of the minds and spontaneously changed it to an appetizer. What a treat for the Autumn Season. Delicious
Ingredients
1 Acorn Squash1 tablespoon Olive Oil
1 teaspoon Oregano
1/2 teaspoon Sea Salt
1/4 teaspoon Freshly ground Black Pepper
1 tablespoon Unsalted Butter
1/4 pound Gorgonzola Cheese

Directions
- Preheat the oven to 400 Convection or 425 regular Wash squash, cut it in half, remove the seeds, the cut the halves in half. place the 4 pieces of squash on a foil lines baking pan, place the olive oil, oregano, sea salt and pepper into each piece of squash. Cut 1 tablespoon of butter, divide it into four squares and place each square into each piece of squash. Bake for 45 minutes. Remove from the oven . This can be done a few hours before.
- Just before serving divide the cheese into four, cut into small squares, place it into each of the pieces of squash and put them under the broiler for about 5 minutes, until the cheese is bubbling, and Enjoy!
