Directions

  1. Preheat oven to 375F and line baking sheet with parchment paper.
  2. Slice fingerling potato in half. Toss with a pinch of salt and pepper, and 2 tbsp of Olive Oil.
  3. Heat skillet on high heat with remaining olive oil to sear, and caramelize potatoes in the pan.
  4. Add butter and bake for 30 minutes until a gorgeous golden brown and fork tender.
