Directions
- Preheat oven to 375F and line baking sheet with parchment paper.
- Slice fingerling potato in half. Toss with a pinch of salt and pepper, and 2 tbsp of Olive Oil.
- Heat skillet on high heat with remaining olive oil to sear, and caramelize potatoes in the pan.
- Add butter and bake for 30 minutes until a gorgeous golden brown and fork tender.
