Directions
- Boil water. Cut ribs into clumps of 5. Add 20 pepper corns and 2 bay leafs to boiling water and add the ribs for 20 minutes.
- Prepare potatoe stuff with oil, salt, pepper and herb de provence - mix into bowl and place in oven at 350 degree on a pan covered with tin foil for 40 minutes - gently shake once 1/2 way through cooking so doesn't get stuck on tin foil. Add several peeled garlic cloves to oven pan.
- Remove ribs from boiling water and dry with paper towels. Put in hot frying pan and add salt, pepper, and olive oil for 10 minutes gently browning both sides.
- Prepare sauce for ribs of oil, salt, pepper 1/4 tsp of hungarian paprika, squeeze 1/2 lime and squash 1 garlic clove into bowl - remover fried ribs and apply dressing to both sides in a pan covered with tin foil and put in oven with potatoes for 10 mins - make sure ribs are covered in foil to maintain juices. then removed top tin foil off ribs and place under broiler thing for 5 minutes to brown potatoes and crispy up the garlic.
- Put potatoes briefly back into herb de province sauce and mix them up. Cut up ribs dividing each piece between the lucky recipients of the most amazing ROB'S RIBS and HERB POTATOES.
- Serve with several baked garlic cloves to keep down ones cholesterol. Serve with masi amorone italian red wine or beer!!!
