Recipe Story

I like to make this broth on a Sunday morning, simmering on the back of the stove, makes the house smell so wonderful! From this broth, I make many delicious soups. French Onion, Wedding, White Bean & Pasta, French Lentil and Barley, and Mushroom, Barley & Lentil, to name a few.

Ingredients

5 Raw Chicken Carcasses
3 Carrots, unpeeled, washed & cut in 3's
5 Stalks Celery, washed and cut in 3's
2 Onions, unpeeled washed and cut in quarters
1 Head Garlic, unpeeled washed and cut in half
2 Teaspoon Whole Black Peppercorns
1 Tablespoon Sea Salt
1 Bunch Fresh Dill,washed and left whole
1 Bunch Fresh Parsley, washed and left whole

Directions

  1. Use a large stock pot.
  2. Wash each chicken carcass and place in the bottom of the pot. Add the rest of the ingredients, then fill up the pot with cold water to approximately 2 to 3 inches over the vegetables.
  3. Bring to a boil, skim off the scum and then simmer the broth for at least 3 hours.
  4. Let the broth cool, Strain and refrigerate overnight.
  5. When ready to bottle, remove the fat, put into plastic containers and freeze. I get 8 liters of broth from this recipe.
