Shrimp and Blood Oranges

This recipe is for a wonderful easy to prepare appetizer ("entrée" in French). It combines the zesty texture and flavour of blood orange with that of jumbo shrimp or prawns. It is based on a recipe I saw on the French morning show (news and culture) called Télématin (“Morning TV”). The programme is shown on TV5 (pronounced Tay Vay sank). They regularly feature food recipes from a variety of sources and demonstrate their preparation. Their website contains a wide variety of recipes for all occasions. BUT… you have to be able to understand the French language.

Cheddar-Ale Soup

This soup is really yummy and really easy to make. In it's most basic form, it isn't the healthiest recipe, but you can try different kinds of cheeses (low-fat cheddar doesn't melt quite as nicely, but it saves a lot of fat!) You can also sub out the heavy cream for some lighter variety, I've even tried thickening it with sour cream when I use a lower fat milk.

White Bean Dip

When it comes to taste, nutrition and even cost, dried beans far outshine the canned variety. Simply soak the beans overnight,in lots of cold water, rinse the next morning. Put beans in a pot, on the stove, and fill with cold water to 3 inches above the beans. Simmer for 1 hour, or until beans are tender, but not mushy. At this point, beans can be stored in an air tight container in the fridge for up to 1 week. Can be used for soups, dips, stews, chili, bean salad, and many more. Always remember that mixing beans with any grain creates a complete protein! (1 cup dried beans = 4 cups cooked)
